Cabbage soup has long been praised as a weight loss soup, and for good reason. It’s naturally low in calories, high in fiber, and incredibly satisfying—making it easier to stay consistent when trying to lose weight.
Low calorie, high volume: You can eat a generous portion without blowing your daily calories.
High fiber content: Helps promote fullness, digestion, and gut health.
Supports hydration: The broth helps keep you hydrated, which is essential for fat loss.
Great for meal prep: Tastes even better the next day.
Easy to customize: Works with keto, low-carb, and clean eating plans.
For those on a keto diet, cabbage is a great vegetable choice. It’s lower in net carbs compared to many other vegetables and provides important nutrients like vitamin C, vitamin K, and antioxidants.
Yes—with smart ingredient choices.
This keto cabbage soup recipe is designed to balance flavor, satiety, and macros. While traditional cabbage soup recipes can be very low-fat, this version includes ground beef for protein and healthy fats, making it more keto-appropriate and sustaining.
A few ingredients (like carrots and tomatoes) are used intentionally and in reasonable amounts to maintain flavor while still supporting weight loss. Many keto dieters find that whole, real foods like these still fit well within their goals—especially during a reset or fat-loss phase.
1 small to medium head of cabbage, washed and chopped
1 lb ground chuck (but any beef or other meat options will be great as well)
1 small green bell pepper, chopped
1 small onion, chopped
4 celery stalks, chopped
½ lb (8 oz) baby-cut carrots
3 cups low-sodium vegetable broth (add more if desired after combining all ingredients)
1 can stewed tomatoes (14.5 oz)
1 can fire-roasted diced tomatoes (14.5 oz)
1 can fire-roasted tomato sauce (15 oz)
Seasonings that I used for this recipe (but please season to your own taste)
Soul food seasoning (or traditional salt will do just fine)
Garlic powder
Onion powder
Paprika
Smoked paprika
Oregano
Turmeric
Black pepper
Cayenne pepper
Oils used:
Avocado oil (but other preferred healthy oils can be used as well but avocado oil is great as it has a high smoke point and great for cooking)
Set your slow cooker to high heat. Add the following directly into the crock pot:
Vegetable broth
Boiled carrots (I like to boil mine 15–20 minutes beforehand, just until slightly fork-tender so that they take less time in the slow cooker)
Stewed tomatoes
Fire-roasted diced tomatoes
Fire-roasted tomato sauce
Stir gently to combine.
In a skillet over medium heat:
Add a small amount of avocado oil.
Brown the ground chuck with chopped onion and green bell pepper.
Season generously with your chosen seasonings.
When the meat is just browned, add chopped celery and cook for about 5 more minutes.
Once combined, transfer everything into the slow cooker and stir.
Add the chopped cabbage a little at a time, stirring as it wilts down. Season again as desired.
Cover and cook on high for 4–5 hours, stirring occasionally. Taste and adjust seasoning throughout the cooking process.
Enjoy immediately, or if you're anything like me, let it sit and enjoy later in the day or the next day. Like most soups, this keto cabbage soup tastes even better the next day as the flavors have even more time to marry together.
